I would never have thought it possible but I’ve discovered a way to get my boys to eat broccoli! This is one of my hubby’s family recipes that I never thought I’d make (who would eat broccoli soup, right?!). Well, I dusted off the cobwebs and put it to the test recently and… well… the pics speak for themselves! My youngest was literally licking the bowl and asking for more! I call that a win for mums everywhere! This recipe is super easy and also works really well with the same amount of Zucchini or Cauliflour.
Ingredients:
4 C Water
4 t Chicken Stock
1 Chopped Onion
1kg Broccoli
1/2 Tin of Carnation Milk
Directions:
Combine everything except the Carnation Milk in a large pot, put the lid on and boil until soft.
Whiz it all together in a food processor, then add the Carnation Milk and salt & pepper to taste.
