Chocolate Fudge Cake

This is my go-to recipe when guests are dropping by at the last minute. It’s so quick and easy – with ingredients I always have in the cupboard AND it doesn’t even have eggs or milk in it – Great for guests with allergies 🙂 I’ve included the icing recipe but to be honest, I never make the icing. The cake is so ‘melt-in-your-mouth’ moist in the middle and crispy on the outside, it doesn’t need icing.

Chocolate Fudge Cake

1 1/2C SR Flour
1C castor sugar
1t vanilla essence
1/2C vegetable oil
3T cocoa
1C water
1T white vinegar

Preheat the oven to 180 degrees celcius
Grease a 20cm round cake tin well
Mix all ingredients together with a whisk
Pour the mixture into a cake tin and bake for 35-40 minutes
Cool in the tin for about 10 minutes, then remove pop it out onto a cake rack to cool completely

Icing (optional)
1C icing sugar
1T butter
1 1/2T cocoa
1-2T hot water
