Donut Cookies

Only a Super Mum could come up with a healthy way to enjoy the taste of donuts! Thanks to Fionna for sending in this recipe and letting me try one for myself at a recent Play Group dress up day. Fionna truly is a Super Mum! And these cookies truly are amaaaaaazing. Nom Nom Nom.

Old fashioned sour cream sugar cookies

¼ cup butter softened
1 ½ cup plain flour
¾ cup white sugar
1 large egg
1 tsp vanilla
½ cup low fat sour cream
½ tsp baking soda
Sugar for rolling

Preheat oven to 180.

In a large bowl, mix butter and sugar together until well combined. The mixture will have the consistency of wet sand. Beat in the egg and vanilla until smooth.

In a medium bowl, stir together the flour and baking soda. And half the flour mixture to the sugar mixture, stirring until combined. Gently stir in the sour cream, and then the remaining flour mixture, stirring until just blended.

Put some sugar into a shallow dish. Drop spoonfuls of dough into the sugar and gently roll them back and forth to coat all over. Place about 2 inches apart on a cookie sheet.

Bake for 12-15 mins, until set, but not yet golden.

FOR SNICKERDOODLES (which is what I did)

Add 1 tsp cinnamon to the flour mixture and ½ tsp cinnamon to the dish of sugar before rolling the cookies.
