Bacon Zucchini Pasta

This recipe takes less than 20 minutes from start to finish, plus is tasty, healthy & budget friendly. My kids loved it – I hope yours do too!

Serves: 4

INGREDIENTS

  • 200g wholemeal pasta
  • olive oil spray
  • 1 brown onion, chopped
  • 1 clove garlic, crushed
  • 100g bacon, chopped
  • 1 small head of broccoli, chopped finely
  • 1 zucchini, grated
  • ½ cup parmesan cheese
  • ¼ cup fresh mint, chopped
INSTRUCTIONS
  1. Bring a large saucepan over water to the boil over high heat. Add pasta and cook for about 8 minutes, until tender. Drain, then return to the saucepan.
  2. Heat oil in a frying pan over medium-high heat. Add onion, garlic and bacon and sauté for about 5 minutes, until tender.
  3. Add broccoli and zucchini and cook for a further 5 minutes.
  4. Add to the pasta a stir well. Stir through the parmesan and mint, then season with salt & pepper. Serve.
